Oysters Bienville


2 tbsp butter
1 cup raw shrimp, chopped
2 tbsp shallots, chopped
1 red bell pepper, finely diced
1 tsp fresh chopped parsley
1 tbsp fresh chopped garlic
1 cup mushrooms, chopped
1/2 cup cooking sherry
Juice of 1 lemon
1 cup heavy cream
1 cup parmesan cheese, shredded or grated
Salt & pepper to taste
Tabasco to taste
Splash Worcestershire
12 oysters on the half shell
1/2 cup bread crumbs


In a sauce pot over medium high heat add the butter, shrimp, shallots, bell pepper, parsley, garlic and mushrooms. Sauté for 5-6 minutes. Add the sherry and the lemon juice. Reduce this by half and then stir in the cream. Simmer until sauce thickens, then add half of the cheese, salt & pepper, Tabasco and Worcestershire.

Spoon a little of the mixture over each oyster. Mix the bread crumbs with the rest of the cheese. Top each oyster with the bread mixture. Bake at 350 degrees for about 4-5 minutes, or until top becomes brown and bubbly.
