Oyster Stuffing


1/2 stick butter 2 small onions, chopped 1 bunch of celery, chopped 1 tbsp fresh chopped garlic
4 cups chicken stock
1 quart extra small oysters, juice reserved
1/4 cup fresh chopped parsley
6-8 cups bread crumbs
1 tbsp ground sage
1 tbsp thyme
Salt & pepper to taste
1 cup of parmesan cheese, grated or shredded


Heat the butter in a sauce pot over medium high heat. Sauté the onion, celery and garlic for about 5 min or until limp. Add the chicken stock and oyster juice and reduce by a third. Add the oysters and parsley, bring to a boil, then remove from heat

Add the bread crumbs, just enough to make the mixture moist but not dry. Add the sage, thyme, salt & pepper and parmesan cheese. Bake at 350 degrees for 15-20 minutes, or until crusty and brown on top.





Serves Makes roughly 10 cups of stuffing
