Chipotle Cheese Oysters


2 tbsp or more canned chipotle peppers, finely chopped
*The preferred canned version come in a tomato sauce called “adobo” sauce.
2 cups of grated jack and cheddar cheese mixed together
12 extra small to medium oysters on the 1/2 shell


Mix together the chopped chipotle peppers and the cheese mix until fully incorporated.

Drain off any extra oyster liquor and place the oysters in a shallow baking dish filled with rock salt to keep them level. Top each oyster generously with the chipotle cheese mixture.

Bake or grill until cheese has melted and oyster is cooked through, about 2-3 minutes. Serve hot.





Serves 3-4 for appetizers
