Monkfish with Rosemary, Lemon & Garlic

Ingredients

2 fillets Monkfish
Salt & Pepper to taste
1/2 cup extra virgin olive oil
4 Lemons, zested and juiced
1/4 cup fresh parsley, chopped
3 tbsp fresh rosemary, chopped
1/2 cup white wine

Directions

Pat the monkfish fillets dry with a paper towel and season both sides with salt & pepper. Set aside in a shallow baking dish

Whisk together the olive oil, lemon juice and zest, parsley, rosemary and the wine until well combined. Pour the marinade over the fish, turning the fillets to coat both sides. Refrigerate for 1 hour, turning the fillets in the marinade occasionally.

Grill the marinated fillets over medium high heat for 3-4 minutes on each side, marinating occasionally, until done.
