Crab, Artichoke and Bacon Stuffed Mushrooms

Ingredients

2 eggs, beatenB
1 lb fresh crab meat
1 cup parmesan, cheddar, mozzarella cheese or a combination
1 6 oz jar marinated artichoke hearts, drained and finely chopped
1/2 cup green onion, finely chopped
1/2-3/4 cup of bread crumbs
3/4 tsp Tabasco
1/2 cup bacon, chopped, cooked and drained
18 large mushrooms, stems removed and reserved
Salt & pepper to taste
1 tbsp olive oil

Directions

Chop mushroom stems, and over high heat, sauté in olive oil for about 2-3 minutes and set aside. In bowl, combine crab meat, cheese, artichoke hearts, green onion, hot sauce, bacon, sautéed mushroom stems, eggs and most of the bread crumbs, and mix well. The stuffing should be moist, but not wet--if too wet, add more bread crumbs. Salt and pepper to taste, and refrigerate for at least an hour.

Lightly oil a baking sheet with the olive oil. Fill mushrooms with the stuffing, and bake on the oiled baking sheet for 10-15 minutes. Cool 5 minutes and serve
