Cod In Parchment with Bacon, Onion, Clams & Red Potatoes


4 medium red potatoes, boiled and sliced
4 tbsp butter at room temperature
3 tbsp fresh Italian parsley, chopped
1 lb fresh cod fillets, bones removed
1 cup fresh steamer clams, scrubbed
4 pieces bacon, chopped, cooked and drained
1/2 onion, julienne
Salt & pepper to taste
Parchment paper


In a pan over medium high heat, sauté sliced potatoes in 2 tbsp of the butter 2-3 minutes. Add parsley, mix well and set aside.

Season the cod fillets with salt & pepper. Lay out a sheet of parchment and butter it evenly on top side. Lay the cod fillets out on the buttered paper and arrange the sautéed potato slices along one side of the fish, and the clams along the other. Sprinkle the bacon, onion and parsley over the top, and season with salt & pepper. Fold the parchment together, and bake at 400 degrees for 12-14 minutes. Carefully cut open the parchment. Discard any clams that have not opened, and serve.
