Spicy Clam Fritters with Herb Mayonnaise


4 lbs fresh steamer clams
1/2 cup white wine
1 fresh thyme sprig
2 fresh parsley sprigs
2 cups flour
2 tsp baking powder
1/2 tsp paprika
1/2 tsp cayenne
1/2 tbsp Worcestershire sauce
2 eggs, beaten
1/2 cup green onion, finely chopped
1 roasted red bell pepper, finely chopped
1/2 cup milk
3 tbsp fresh basil, chopped
1 tbsp fresh Italian parsley, chopped
2 tbsp butter
Herb Mayonnaise (recipe follows)


Wash clams and place in a large pot. Add the wine and, thyme and parsley. Cover and cook over high heat 5-6 minutes, or until shells open. (Discarding any clams that do not open.)Remove shells and strain clam juice through a sieve. Add enough milk to the strained clam juice to make one cup, and set aside.

Finely chop the clams and add flour, baking powder, basil, paprika and cayenne. In a sauté pan, melt the butter over medium low heat and add the onion and pepper. Sauté the onions until just limp and then add them to the clams. Combine eggs with reserved clam juice and milk mixture. Add to the clams and mix well. Preheat oil in a deep fryer to 350 degrees. Drop spoonfuls of clam mixture in hot oil and fry until they are golden brown and puffy. Drain onto paper towels and serve hot with dollops of the herb mayonnaise.


Herb Mayonnaise
1 cup mayonnaise
2 tsp freshly chopped dill
1 tbsp fresh lemon juice
Salt & pepper to taste

Mix all ingredients well and refrigerate for at least one hour.


* You may drop spoonfuls into a lightly oiled non-stick skillet over medium high heat instead of using a deep fryer.
